What is the Difference between Appetizers and Mini Foods?

Mini foods are finger foods—one-bite delights that can be either passed or stationary. Like bruschettas, crudités, and sticky spicy sesame cauliflower wings, mini foods can be served separately from, prior to a meal or as the main wedding food.

On the other hand, appetizers are slightly larger in size and eaten as first courses when seated at the table. They are also prepared in a way that complements the main course and dessert courses to follow.

Mini Foods for Weddings Planning Tips

If you have made up your mind and are going for the mini foods for weddings craze, here’s some planning tips that will help you make choices that fit your budget.

How Many Pieces Should I Estimate per Guest?

Let’s be real here: you don’t want to send your guests home hungry; neither do you want to waste excess food. Mini foods for weddings require a bit of tweaking. At cocktail hour, estimate 2-4 pieces per guest before entrée. While 5-6 pieces per guest can be estimated after the main course. For dinner replacements, 12-14 pieces per guest will do just fine.

Of course, for a better assessment, take into consideration how filling or rich your choice of mini foods is. Heavier, creamier concoctions or chocolate-filled bites will demand less pieces than the more fruity and summery dishes.

Let’s Talk Cost and Budgets: How Much for that Mini Food on the Window?

Contrary to reducing overall cost, mini foods for weddings might be a more expensive option. The thing about mini foods is that they are labor intensive—the sheer creativity, perfection and attention that goes into creating these beauties. It all depends on how elaborate or simple they are.

You might save on reception staff versus a seated dinner. So consider how you plan on serving them!

If you are planning to make mini foods the spotlight of your nuptials, a smart advice to mix up your special day with larger food types to be on the economical side. You can introduce heavier items like braised lamb meatballs or salmon sliders to complement the table. On the other hand, reduce handmade pieces by just incorporating baked brie, quinoa salad, or a mezze platter. Bring on the “platter.”

Go for a Casual Setup on Small Backyard Weddings

Small gatherings with framily or outdoor weddings are the perfect setting for your grilled cheese bar. Along with some additions your guests can you use, arrange your basics on a counter or long table.

Decorate the table with a few different bread types, like sourdough, whole wheat, challah, and even donuts!

Then spice up your cheese game with varieties, like, Swiss, fontina, gruyere, mozzarella, brie, and gouda. Speaking of cheese, you may need to label each type if you want to offer many options so your guests know what to pick.

Of course, to organize a grilled cheese bar at a wedding you wouldn’t leave out butter. You can even flavor the delish spread with chives, roasted garlic, cinnamon or truffle oil and sugar.

Now, you can go wild with your additions. Roasted peppers, olive tapenade, fresh herbs, bacon, ham, caramelized onions, roast beef and sliced pears can all make your grilled cheese bar special.

Finally, bring in a cook to man the hot griddles or a couple of frying pans at the final station of your grilled cheese bar.

Grilled Cheese Stations are Ideal for Large Weddings

The last thing you want is spills and stains all over the wedding venue. Needless to say, anything hot like a griddle or a panini press could spell disaster. Therefore, hiring a couple of chefs to man the grilled cheese stations is highly advisable. Let your guests have fun picking their ingredients or choosing from the grilled cheese menu. The larger the number of guests, the more stations you will have to add. The cooks will know how to handle the griddles and the heat of the mini kitchen.

You may want to set up a few printed grilled cheese recipes for your guests. This brings that touch of adventure and creativity to your ceremony.

Scrumptious Recipes for a Grilled Cheese Party

One of my favorites grilled cheese recipes is this roast beef smoked gouda. To make one of these delish sammies, you will need 1/4 lb. roast beef, 1 large red onion, 1 tablespoon of fresh sage, 2 tablespoons of butter, 3oz of smoked gouda, and 2 slices of bread.

  1. Melt 1 tablespoon of the butter in a large skillet over medium heat. Once the butter is melted, add the onions and sage.
  2. Now let’s caramelize the onions: Toss the mix so the onions are coated in butter, lower the heat to medium-low and sauté slowly for 30 minutes. Stir occasionally.
  3. Spread the remaining butter on one side of each slice of bread.
  4. Place on of the bread slices with the buttered side facing down and pile half the cheese slices on top, add the roast beef, spoon some of the caramelized onions layer the rest of the cheese slices and top the with the other bread slice.
  5. Place the sandwich on a skillet or panini press over medium heat.
  6. Let the cheese melt for about 2 minutes, flip the sandwich over and let the cheese melt for another 2 minutes.
  7. Serve on a plate with your favorite soup or beverage and voilá!

Pizza Margherita Grilled Cheese Recipe

A classic Margherita pizza stuffed in between two slices of bread! Most of the ingredients are for the sauce. So you have a choice to make it or buy it at the supermarket. We are going straight for the grilled cheese sandwich. Sauce, check!

Butter the outsides of two slices of sourdough bread. Spoon the sauce over their non-buttered side, add slices of basil and mozzarella and drizzle some extra virgin olive oil.  If you are feeling extra daring, add a few drops of balsamic vinegar. Salt and pepper to taste.

Cook in a hot cast-iron skillet until the cheese has completely melted and each side is golden brown. Enjoy!

The Wedding Dessert Table Menu or What to Offer on Your Wedding Dessert Tables

Before even considering the dessert table decor, let’s go through some ideas to inspire your wedding dessert table menu. We wouldn’t want to have a magnificently decorated table that doesn’t match our scrumptious and mouth-watering sweets. AmIright?

The variety of sweets is truly endless. They range from lighter and less caloric versions, such as gelato or strawberry parfaits, all the way to those irresistible, decadent and appetizing desserts that will ruin anybody’s diet, like eclairs, cake-pops, sugar meringues, cheese cakes and macarons.

But the list does not end here. So, how do we choose what to offer at the wedding dessert tables when we have so many delicious and tempting confectioneries to pick from? Just follow these tips to help you choose your wedding dessert table menu.

1Pick your favorite sweets first

While is true that offering a variety of sweets and desserts will make it easier to satisfy your guests’ preferences, don’t ever forget that it’s your big day. Pick a couple of your favorite desserts (at the very least) to start building your wedding dessert table menu.

2Seasonality Counts

Are you getting married in the winter? Indulge in rich desserts like molten lava cakes, crispy churros, baked apples with dried cherries and maple syrup, Linzer cookies, warm almond cinnamon apple pudding and black forest cakes. Your guests will love to linger at your reception just a little longer to taste each and every one of your desserts!

Summer weddings call for lighter fare like an interactive ice-cream bar, refreshing fruit cups, frozen yogurt coconut pops, lemon-infused custard pudding, blueberry pies and stone fruit pouches.

Take into account the season to decide what to offer at your wedding dessert table. What an amazing way to use the weather in your favor!

3Should the wedding dessert table menu fit the main reception menu?

Not necessarily. You may offer desserts that fit the style of the food you served for dinner, lunch or at your cocktail reception. A French affair may be followed by Crème brûlée, crepes, éclair au chocolat, or mille feuilles – the famous Napoleon dessert. Citrus desserts, plum creams and strawberries custards for a Mediterranean meal. But if you’d rather have contrasting flavors, forget about what you served earlier and show off scrumptious desserts from different cuisines such as Tuscan Biscottis or British scones with butter and jam.

6How much is too much?

When it comes down to how many desserts you will need, there’s a simple rule. Divide each dessert by the number of bites it takes to eat them. A cake-pop is one bite, a cupcake may be two, and a cake slice may be three or four bites. Now, estimate 10 bites per guest and avoid a pile of leftovers while reducing your expense.

How fun is this street food themed festival wedding featuring food trucks?

Food truck weddings have picked up steam and have become quite a popular wedding trend. From fusion to comfort food all the way to authentic regional cuisine, these adorable and original rolling kitchens cater to even the most delicate palates.

Having your catering done on wheels can account for a truly unforgettable wedding experience. Imagine your wedding at your favorite city park paired with your favorite food without concerning yourself with the availability of kitchen facilities!

The Affordability of a Food Truck Wedding

A food truck wedding is also very reasonably priced. While the average cost of traditional catering in the U.S. is $70 per person, food trucks tend to be a more affordable catering option. A food truck wedding has an average cost of $10-$20 per head.

To make it even more appealing, food truck weddings use disposable plates so you don’t need to worry about the cost of renting or cleaning them. Woohooo!!

Let’s take a look at what other things to consider when planning on renting food trucks for your wedding.

Where Do I Find Food Trucks For Weddings?

Do you visit a favorite food truck that feels like an oasis after a night out? Or do you frequent one when strolling out of the office for lunch? Start there. Ask them if they could cater your wedding! It never hurts to ask.

If none come to mind, check out local food truck catering events. These events will give you a chance to taste the food trucks’ menus and have some fun in the process. They tend to be advertised on your local newspapers and even on Meetup so they are quite easy to find.

Last but not least, Google “food truck wedding” or “local food trucks for weddings”! Food trucks publish their routes on their websites. Follow them, find out where they will be, and organize a yummylicious food tasting with your friends or your better half or both!

How To Organize a Food Truck Wedding: The 10 Best Tips You  Will Ever Read

If you are going full-on food trucks for your big day, you’ll want to be sure you can serve a menu that you love. You could choose one or two different trucks or food carts for each course to create some nice culinary diversity.

Food trucks are more than just kitchens on wheels, they are a source of entertainment as well.

1Planning the food truck wedding menu

Some of the most popular food trucks serve gourmet meals and mini-foods for weddings such as tacos, sliders, cupcakes, and mini desserts. But there are food trucks for all tastes and styles: vegetarian, Asian fusion, Greek food, and some specialize in ice cream or donuts! Incorporate a couple of food trucks to offer some variety to your guests, if your budget allows.

2How many food trucks will you need?

One food truck can serve about 75 to 100 people tops. So, if you have more than 100 guests, consider booking more than one. To avoid crowding at the food truck’s line, hire one food truck that offers a vegetarian meal and the other a meat-based dish.

3Extra help might help. 😉

The last thing you want is starving guests waiting in long lines to get their food while donned in wedding attire. If you only need one food truck, how about hiring a staff of folks to roam the party helping guests? This same crew can help clean up once the reception is over.

4Reserve a space to park the food trucks

If you are hosting a wedding in the countryside, you will have plenty of space to park the food trucks. On the other hand, a food truck wedding at a public park may run into certain regulations established by the municipality on where to park. Make sure you check where your food trucks will be able to park or you’ll be sending your guests on a long walk to taste your wedding meal.

7Get creative with the food truck menu sign and the menu itself!

Most food trucks will agree to customize their menu – unless what you are asking for is really outside of their realm of expertise. But if you wanted to add a little twist on those burgers that remind you of your childhood, why not ask? Create a menu board listing the food choices and add the names of the bride and groom to it!
